Indulge in Homemade Strawberry Lemon Blondies

The perfect treat to make with fresh picked strawberries 🍓

What better way to create lasting memories with your loved ones? For many families, the kitchen serves as the heart of the home, where cherished moments are shared and delectable treats are crafted. This Mother’s Day, my older kiddos and I embarked on a delightful baking adventure, using fresh strawberries from Kenny’s Farms and lemons from our own tree to whip up mouthwatering Strawberry Lemon Blondies.


Creating Sweet Memories in the Kitchen

One of the joys of parenthood is experiencing the world through the eyes of your children. Baking together not only fosters valuable life skills but also strengthens bonds and creates treasured memories that last a lifetime. We were so excited to see how our efforts would pan out as we gathered our ingredients and pre-heat our oven.


INGREDIENTS:

- 1 cup (2 sticks) salted butter, softened

- 1 cup sugar

- 1 large egg

- 1/4 cup lemon juice

- 1 tablespoon lemon zest (optional)

- 2 1/3 cups flour

- 1/2 teaspoon baking soda

- 1 1/4 cups fresh strawberries, diced


DIRECTIONS:

1. Preheat the oven to 350 degrees Fahrenheit and line a 9×9 baking dish with parchment paper.

2. In a large bowl, beat the butter and sugar until creamy and fluffy.

3. Add the egg and beat until combined, then mix in the lemon juice and zest.

4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients.

5. Carefully fold in the diced strawberries using a rubber spatula.

6. Scoop the batter into the prepared baking pan, spreading it evenly.

7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the blondies to cool on the counter before adding the glaze.


GLAZE:

- 1 1/4 cups powdered sugar

- 1/2 cup strawberries, chopped (NOT pureed)

- 2-3 tablespoons lemon juice


1. In a large bowl, whisk together the powdered sugar and lemon juice.

2. Gently fold in the chopped strawberries.

3. Smooth the glaze onto the cooled blondies and allow it to harden before slicing and savoring each delectable bite.

With each bite, we were transported to a realm of sweetness and tanginess, perfectly balanced by the freshness of the strawberries and the zing of the lemon. These Strawberry Lemon Blondies encapsulated not only the flavors of the season but also the love and joy shared among family.
